Why Maintenance Matters in a Professional Kitchen

Stainless steel work tables carry the heaviest load in any commercial kitchen — daily chopping, hot pans, spills of acidic ingredients and constant sanitizing. Without a simple maintenance routine, even the best 201 or 304 food-grade stainless steel table will develop stains, rust spots and surface fatigue that shorten its service life and make your kitchen look neglected during health inspections. The good news: with about 10 minutes of care per day, a quality work table can look and perform like new for 10 years or more.

Daily Cleaning: Keep It Simple and Consistent

Clean your stainless steel work table at the end of every shift using warm water and a mild dish soap. Wipe in the direction of the brushed grain — this prevents fine scratches from becoming visible over time and keeps the matte finish uniform. Rinse thoroughly and dry with a soft cloth. Standing water is one of the most common causes of spotting, especially in hard-water areas.

What to Avoid

Removing Stains and Discoloration

For stubborn spots such as heat marks, water scale or grease film, use a stainless steel cleaner or a paste of baking soda and water applied along the grain. For rust-like surface deposits, a very mild non-abrasive stainless polish can restore the finish. Test any new cleaner on a small, hidden area first. Never use metal scrapers, knives or razor blades on the work surface.

Preventing Rust and Corrosion

Food-grade stainless steel does not “rust” like carbon steel, but it can develop tea-staining or rust-colored deposits when exposed to chlorides (salt, soy sauce, certain sanitizers) for long periods. Wipe up acidic and salty spills promptly, especially around seams and welds. In coastal kitchens with salty air, wipe the table dry after every shift and apply a thin film of food-safe stainless oil monthly to add a protective layer.

If your table came with welded seams, inspect them during cleaning — quality TIG welds stay smooth and corrosion-free, but any surface irregularity should be reported to us under warranty so we can advise or replace parts.
